Elm Hill Meats president Robert Baltz cooks a batch of the firm’s new nitrite-free bacon during a demonstration at its plant Dec. 6, 1977. Baltz said at the time the company would continue to offer the standard product cured with sugar and nitrites, along with the new product that is cured with salt and sugar in a method Baltz said antedates the nitrite cure. While Baltz said he doesn’t believe bacon with nitrites causes cancer, according to recent government reports, he wants to give consumers a choice.
